Grounded with Root Veggies
Thes Root Veggie Fries are amazing! Excerpted from Clean Food by Terry Walters. I love the taste of the parsnips and olive oil roasted!
Recipe of the Month Get Grounded with Root Veggies
Ingredients
1 rutabaga, peeled
4 carrots
4 parsnips, peeled
3 T extra-virgin olive oil
1/4 c yellow corn meal
1 tsp course sea salt
1/4-1/2 tsp ground nutmeg
cayenne pepper
- Set oven to broil
- Cut veggies into sticks and steam 3-4 minutes or until just tender
- Remove from heat and place in large bowl
- Coat with oil and toss with cornmeal, salt, nutmeg and cayenne (to taste)
- Lightly oil cookie sheet and spread fries in single layer
- Broil three minutes, then remove from oven, flip fries and broil another three minutes or until lightly browned
- Serve hot makes 4 servings
